The Steelheader: A Filleting Champion for Kitchen and Stream

The Steelheader is a versatile fillet knife designed to excel at both streamside filleting and kitchen tasks.

Built for Clean Fillets:
  • Thin and Flexible Blade: The 5.75-inch blade with an 18-20 degree bevel angle facilitates smooth cuts and precise maneuvering, resulting in clean fillets of small and medium size fish with minimal waste.
  • 440C Stainless Steel: A good balance of sharpness, durability, and corrosion resistance, making it easy to maintain in both freshwater and saltwater environments.  This is the highest grade of all the 440 series steels.
  • Rockwell Hardness (58-60): This hardness ensures the blade holds a sharp edge for multiple filleting sessions before needing resharpening.

Comfortable and Lightweight:
  • Handle: The rubberized checkered Suregrip handle is designed for a secure and comfortable grip, even when wet or slippery, minimizing fatigue during prolonged use.  Available in black or orange.
  • Lightweight (2.8 oz): This lightweight design reduces hand strain and enhances maneuverability.

Functional Carry:
  • Nylon Sheath: This included sheath offers secure and convenient storage for your Steelheader Knife and dries quickly when wet.

While designed for filleting fish, the Steelheader’s precision and maneuverability make it equally at home in the kitchen for boning and general slicing tasks.

I bought my dad the steel header yesterday, I cleaned a fish with and had to go back and get one for myself. Incredible product. One day I’ll get the coho as well! Keep up the great work

I own several of your knives, including the Jaeger boning knife and the Steelheader fillet knife, both of which I use when we butcher. I was wondering if you make either of those knives with a pink handle. My wife has started helping us, and she would like her own knife. I figure if she wants to help, I want to get her a good knife because of the time it saves us! Please let me know. Thanks!

First off, I want to apologize for the condition of these 4 wonderful Knives. Each of them have filleted over 1000 salmon!! I have never had a fillet Knife that I liked until my incredible wife purchased my first Coho Knife for my Birthday 6 years ago, prior to that I dreaded filleting fish after a day of fishing. I now filled my fish but 6 other buddy’s Ash on an annual trip to Alaska. I truly treasure these knives. If each Knife could speak it would tell of the most incredible adventures and fish stories. Thank you again for such a great product.
